Ingredients
- 1 package (12 ounces) silken tofu, drained and pressed (See note below)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar (or maple syrup for a refined sugar-free option)
- 1/4 cup plant-based milk (almond, soy, or oat work wonderfully)
- 2 tablespoons vanilla extract
- Pinch of salt
- Optional toppings: Vegan whipped cream, fresh berries, chocolate shavings
Instructions
["Combine Ingredients: In a food processor or high-powered blender, combine the drained and pressed silken tofu, cocoa powder, sugar (or maple syrup), plant-based milk, vanilla extract, and salt.","Blend Until Smooth: Blend the mixture until it is completely smooth and creamy. This may take a minute or two. Scrape down the sides of the bowl as needed.","Taste and Adjust: Give the pudding a taste and adjust the sweetness or cocoa powder to your preference. Add more sugar or maple syrup for a sweeter pudding, or more cocoa powder for a richer chocolate flavor.","Portion and Chill: Divide the pudding into individual serving dishes or ramekins. Cover them with plastic wrap or lids and refrigerate for at least two hours, or preferably overnight, to allow the pudding to set completely.","Garnish and Serve: Before serving, garnish the pudding with your favourite vegan toppings. A dollop of vegan whipped cream, a scattering of fresh berries, or some delicate chocolate shavings add an extra touch of elegance."

Chef's Notes
Note on Draining and Pressing Tofu: Silken tofu contains a lot of water. To achieve the perfect pudding consistency, it's important to drain and press it. To drain, simply place the block of tofu in a colander lined with a clean kitchen towel or cheesecloth. Let it drain for about 30 minutes. To press, place a heavy object (like a book or a can of beans) on top of the tofu for another 30 minutes to extract even more water.
