Prep Time: 10 minutes Cook Time: 0 minutes Yields: 4 servings --- INGREDIENTS --- - 1 package (12 ounces) silken tofu, drained and pressed (See note below) - 1/2 cup unsweetened cocoa powder - 1/2 cup granulated sugar (or maple syrup for a refined sugar-free option) - 1/4 cup plant-based milk (almond, soy, or oat work wonderfully) - 2 tablespoons vanilla extract - Pinch of salt - Optional toppings: Vegan whipped cream, fresh berries, chocolate shavings --- INSTRUCTIONS --- --- CHEF'S NOTES --- Note on Draining and Pressing Tofu: Silken tofu contains a lot of water. To achieve the perfect pudding consistency, it's important to drain and press it. To drain, simply place the block of tofu in a colander lined with a clean kitchen towel or cheesecloth. Let it drain for about 30 minutes. To press, place a heavy object (like a book or a can of beans) on top of the tofu for another 30 minutes to extract even more water.
