Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups plant-based milk
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons melted vegan butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, combine the plant-based milk and apple cider vinegar. Let it sit for a few minutes to curdle slightly (this makes a vegan "buttermilk").
  3. Add the melted vegan butter and vanilla extract to the wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and whisk until combined. Don't overmix.
  5. Heat a lightly oiled griddle or skillet over medium heat.
  6. Pour ¼ cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. Serve with your favorite toppings, such as maple syrup, fresh fruit, or vegan whipped cream.

I followed the recipe exactly, but with two small changes that made these pancakes absolutely sing! 1. I added the zest of one whole lemon to the dry ingredients. 2. I gently folded in 1 cup of fresh blueberries right at the end before cooking.
